Nebiolo refers to the white milky veil that forms over the fruits as they reach maturity. Barolo wines are typically a deep red with a thick and complex flavour. Some are flowery like violets and roses. Others are fruity, licorice or oaky. Barbaresco wines are lighter and more elegant.

"Offspring" from the parents Cabernet Sauvignon and Pontac. The juice of Roobernet is as dark as Pontac and the wines have deep colour and do not need long skin contact. The wines are not too tannic and therefore easily accessible. Roobernet wines have a distinctive Cabernet Sauvignon character. Roobernet has only been available since the turn of the century.

It produces tannic wines that can be high in alcohol and is most successful in Rhone-style blends. It has a particular affinity for Grenache, softening it and giving it structure. Its taste varies greatly according to area but often has a wild, gamey or earthy flavour, with soft red fruity flavours.

Sangiovese derives from sanguis Jovis, "the blood of Jove". It is most famous as the main component of the Chianti blend in Tuscany but winemakers outside Italy are starting to experiment with it. Young sangiovese has fresh fruity flavours of strawberry and a little spiciness but it readily takes on oaky, even tarry flavours when aged in barrels.

Pinotage was produced by crossing Pinot Noir and Cinsault and is grown primarily in South Africa. The Pinotage grape ripens early and produces well. It has a distinctive flavour, very fruity with an underlying taste frequently compared with banana. It can be drunk young to maintain its fruity flavour but also ages well. The mellowing effect allows the wine to taste like a mature bordeaux.

A Portugese variety... considered one of the best varieties for the production of port in South Africa. It produces earthy, organic red wines and is excellent for blending. In this style the grape is known for it's darker colour and tea-like perfumy aromas.

Merlot's popularity is due to the fact that it is softer, fruitier and earlier-maturing than Cabernet Sauvignon, yet displays many of the same aromas and flavours like black cherry, currant, cedar, and green olive along with mint, tobacco and tea-leaf tones. Although enjoyable as a varietal wine, it is probably most successful when blended with Cabernet Sauvignon, which contributes to the structure, depth of flavour and ageability merlot lacks.
